About this listen

Two masters of composition - a chef and a perfumer - present a revolutionary new approach to creating delicious food.

Michelin two-star chef Daniel Patterson and celebrated natural perfumer Mandy Aftel are experts at orchestrating ingredients. Yet in a world awash in cooking shows and food blogs, they noticed, home cooks get little guidance in the art of flavor. In this trailblazing guide, they share the secrets to making the most of your ingredients via an indispensable set of tools and principles, including:

  • The Four Rules for creating flavor
  • A Flavor Compass that points the way to transformative combinations
  • Locking, burying, and other aspects of cooking alchemy
  • The flavor-heightening effects of cooking methods
  • The Seven Dials that let you fine-tune a dish

With more than 80 recipes that demonstrate each concept and put it into practice, The Art of Flavor is food for the imagination that will help cooks at any level become flavor virtuosos.

So good I’m buying the book version

This book has taken my understanding of food and cooking to a whole new level. Once I got to the chapter on flavor profiles of herbs I realized that this book had to be on my shelf, something to come back to time and time again when developing recipes. I suggest this book for anyone who wants to deep dive into (or should I say nerd out to) flavor combinations and how to apply them to your cooking.

Chapter 1

Is so brainy and cool! It totally describes how I experience taste and smell and how I connect it all. I get inspired by recipes and read my cookbooks like mystery novels. I always cook based on my knowledge of spices and ingredients, how they smell, feel, connect with each other in a dish and so on. In the end, a dish is always an individual creation of my own and, therefore, very unique. I just love that stuff you are talking about. And I love to totally be attentive and visualize what is read. Thank you.

Absolutely fascinating!!

I’m going to have to listen again and slow it down so I can take notes. I love learning about how elements work together to create flavors. I’ve been reading Salt, Fat, Acid, Heat as well and these books work well together. I learned so much!

meh

The book has good info, but I think I was hoping to learn more. It's great for the beginner in flavoring and cooking. Common knowledge to a seasoned cook though. The narrator mispronounced a fair number of words.
