Saru Jayaraman, who launched the national restaurant workers' organization Restaurant Opportunities Centers United, sets out to answer these questions by following the lives of restaurant workers in New York City; Washington, D.C.; Philadelphia; Los Angeles; Chicago; Houston; Miami; Detroit; and New Orleans.
